cripsy chickpea tikka masala gyros (plant-based ) ✨🌱 makes 3 gyros ~20g protein per gyro 💪🏽 Ingredients ✨ Spiced Chickpeas 1 can chickpeas (15 oz), drained & rinsed 1 tbsp olive oil 2 tsp smoked paprika 1 tsp garlic powder 1 tsp cumin 1/2 tsp turmeric 1/2 tsp chili powder Salt to taste Ground black pepper to taste Gyros 3 Pitas or Naan Bread (I used @trulyindianfood Tikka Masala Naan) butter lettuce 1/2 cucumber, thinly sliced Any additional optional veggies of your choice Tikka Masala Inspired Tzatziki 1.5 cups unsweetened vegan yogurt 1/2 large cucumber, grated & dry 2 cloves garlic, grated 1 tbsp tomato paste 1/2 lemon, juiced 1 tsp garam masala 1/2 tsp cumin 1/2 tsp coriander 1/2 tsp smoked paprika 1/4 tsp turmeric 1/4 tsp chili powder 1/3 cup fresh dill, chopped Salt & black pepper to taste Instructions ✨ Chickpeas: Toss chickpeas with olive oil, spices, salt & pepper until well coated Crisp: Air fry at 400°F for 12–15 mins or roast at 400°F for 20–25 mins until crispy Tzatziki: Mix tzatziki ingredients until smooth & creamy, then fold in cucumber and dill Naan: Warm the Pita/ Naan in a skillet or oven until soft and heated through (see package directions) Assemble: Lay down naan, add butter lettuce, tzatziki, crispy spiced chickpeas, cucumber & optional additional tzatziki drizzle I found @trulyindianfood Tikka Masala Naan (vegan) at my local whole foods follow me @itsromab for more plant-based recipes 🫶🏽 #vegan #veganfood #plantbased #veganrecipes #vegansofig
